The Quintessential Banana Bread

Ingredients

2 1/2 Bananas, mashed (I got about 2/3 cups plus 2 TBL when mashed)
3/4 cup Brown Sugar
1/2 cup Earth Balance
5 TBL French Vanilla Soy Creamer
2 cups Bread Flour
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/4 tsp Salt
1/2 cup chopped nuts (i used hazelnuts!)

So I actually have been cooking quite a bit lately despite the lack of updating. This is one of my newest creations I whipped up by modifying my Grandmother's famous banana bread recipe. The texture is perfect... not too dry and just moist enough. Would be ideal with some Earth Balance or Jam. Stay tuned because I'm currently conceptualizing a vegan "ricotta"-stuffed banana bread french toast... mmmm!

Preheat oven to 350. With a mixer, cream together your sugar and Earth Balance. Then add the mashed bananas. In a separate bowl, combine all your remaining dry ingredients. Then gradually add the dry ingredients into the wet. Next add the creamer. Fold in the nuts. Pour into a greased bread loaf pan and bake for 1 hour.

Valentine's Cheesecake

"Cheesecake, Gobble, Gobble, Cheesecake" Um... Nuff said!

Basically, here is a last minute dessert idea if you're looking to jazz up your night. And if you are alone this Valentine's, own it. Not only did I buy myself tulips this year but I will probably be consuming most of this cheesecake on my own. So, whether you have a valentine or not, treat yourself today.

I made a marble cheesecake. Essentially, I made a plain vanilla cheesecake and then set aside 1/3 cup of batter, added some cocoa, and swirled it in. Then I shaped some strawberries into hearts (easier than you'd think) and dipped then in chocolate. It looks impressive but takes no time at all.

Avocado Drizzled with Soy Sauce... I'm Serious.

Okay, hear me out. I know this isn't exactly a "recipe", but I wanted to share it, because really simple food can often be the best... and it deserves the spotlight sometimes too!

Sooooo.... This is really just another no brainer snack idea... THAT FOR SOME REASON NEVER OCCURRED TO ME until a friend made it one night. As an extreme Japanese food enthusiast and someone who could literally eat 4 orders of avocado rolls in one sitting... lemme just say that no two things were more meant for each other than avocados and soy sauce. Like... this totally resonates with my taste buds on every level.

I don't know, maybe my enthusiasm is just the result of being a hardcore avocado roll groupie... MmmmmmmmmMMMMmMMmMmmmm!
