Barbari Bread

As I have mentioned before, my roommate, Rana, is from Iran. Sometimes I am lucky enough to indulge in some of her Iranian cooking. She recently found this recipe for Barbari Bread, which she told me is a very traditional Iranian bread. She has made it twice so far and it has been so unbelievably good both times, that I had to share it with you guys. Although I haven't actually made it myself yet, the ingredients and directions seem pretty simple. You can even get creative with toppings. For example, the recipe only calls for poppy seeds, but I know Rana added some spices and sesame seeds ontop of her bread. Personally, I like to enjoy mine dipped into a little olive oil with Italian seasonings.

Banana Peanut Butter Cup Smoothie

Ingredients


1 & 1/2 Frozen Bananas
1 cup Almond Milk (I used Unsweetened, but that's up to you)
2 TBL Cocoa Powder
2 TBL Peanut Butter
1/2 tsp Agave Nectar

OH MY GOOOODDDNESSSSS. This tastes like a super decadent milkshake without any of the guilt. In fact, you could have this for breakfast... like all the time.... :^O!!!!! Just blend all ingredients in a blender and then indulge in the best smoothie EVERrRrRrRrRrR!

Zucchini Noodles with Creamy Curry Sauce

Ingredients


3 Zucchinis, peeled
1/4 cup Earth Balance
2 TBL Whole Wheat Flour
1 1/2 cups Unsweetened Almond Milk
1/2 tsp curry
1/4 tsp onion powder
1 TBL nutritional yeast
pinch tumeric
pinch paprika
s&p to taste
red pepper flakes to garnish (optional)

Okay, I'm putting the "Mexican Stuffed Shells" post off for a hot minute because I made this for dinner last night and I just had to share! A few months ago, I decided to stop buying pasta. It had become my go-to easy dinner and I knew I was eating too much of it. Surprisingly enough, I ended up losing almost ten pounds as a result! That being said, I still always crave pasta. I mean, it is my comfort food. So I'm always looking for ways to satisfy the craving with alternatives. For example, sometimes I make Spaghetti with Spaghetti Squash, or just season brown rice the same way I would pasta. But I have been wanting to make my own zucchini noodles for a while now. It was so simple! And yummy! Once you've made the cream sauce, you could season it however you want really. You don't necessarily have to do a curry sauce.

Now lemme get this straight... I can eat as much as I want without the guilt? yes, please!

First, peel long strips of the flesh of the zucchini. Toss them in a pot of boiling water for a few minutes and then drain. Meanwhile, you can start on the sauce. Melt the Earth Balance in a large saute pan over medium heat. Whisk in the flour so that it absorbs the butter. Then, gradually whisk in the milk. I would add it 1/4 cup at a time and once it would begin to thicken, I would add another 1/4 cup. Once it reaches the consistency of an Alfredo sauce, add the curry, turmeric, s&p, onion powder, nutritional yeast, and paprika. Mix well and then add the noodles into the sauce. Toss until well coated. Then, serve with some nutritional yeast, red pepper flakes, and paprika to garnish. Voila!

Babycakes NYC in Downtown Disney!

I realize I've been doing a lot of reviewing lately so I'm trying to dedicate more time to cooking and less time to eating out. That being said... I've gotta get this outta my system! I just had to show off the pictures from my first visit to Babycakes while I finish writing my Mexican Stuffed Shells recipe post (which will be up in the next couple days... so stay tuned!).

Last week, I was in Orlando with a friend seeing Bonnie Prince Billy play. I'm not usually in that area, so I made sure to take a quick trip to Downtown Disney after the show was over. The original location of Babycakes is in NYC, but they recently replaced a MCDONALDS (!!!!!!!!) in Downtown Disney.

The actual store was tinier than I was expecting, and after seeing all the charming photos of the NYC shop, I was a little underwhelmed with the presentation. That being said, I'm sure they had more restrictions with this location. Besides, you get the charm of DISNEY!

We tried the Red Velvet Cupcake and the Cookie Sandwich. Both were excellent but the cookie sandwich definitely stole the show. I'm not even really a "cookie person" seeing as I don't usually really like a cookie unless it's either almost burnt or doughy and undercooked. But this cookie was thin, had a nice crunch to it, AND came complete with super yummy frosting inside... so I had no complaints!

One thing I thought was kinda neat was that it was the only dessert option in the cafeteria-like setting. So, lots of people were flocking to it, not even knowing it was vegan. I just secretly wish all the customers found out at some point though... Preferably after they "oohed and awed" about how good the cookie sandwich was ;)

All in all, it was a really good experience for ma taste buds! Besides, where else can you eat a vegan cookie sandwich AND see Planet Hollywood's Gizmo replica all within walking distance from each other??? (<<< um, my heaven) Worth it! :D
